CrockPot Corn Bread Recipe
Day 24.
Who would have thought that you could make cornbread in the crockpot?
Not me until the other day. And now I might do it this way more often.
It tastes just like oven-baked cornbread, but cooking it in the crock allowed me to pick up my daughter from school, return library books, mail letters and pick up a few groceries.
And the smell when I walked in the door?
Awesome.
The Ingredients.
I used the recipe on the back of the Quaker Cornmeal carton, although I substituted Pamela's for the flour and omitted the baking powder (because pamela's has baking powder in it already).And I used butter instead of vegetable oil because I like the flavor of butter better. And I used soy milk instead of cow's.
It seems as if I have a problem with following directions.
The Directions.
Mix batter together according to recipe instructions.Coat the inside of your crock with cooking spray.
Dump batter in and close up.
Cook on high for 3-4 hours, or until a toothpick comes out clean.
I cooked this for exactly 3.5 and it was perfect.
We had this with leftover Minestrone Soup, which from now on will lovingly be called Garbage Soup, thanks to Becka.

ReplyDeleteIf you ever want to take your cornbread up a notch--I love adding a cup of frozen corn kernels, a tablespoon of chili powder, and a tablespoon of sweet smoked paprika. Tastes really good with honey butter like that--a sweet, spicy combo. that I'm always searching out.

ReplyDeleteDid you prop the lid open on this recipe like you did on the other baking recipes? It sounds like you had the lid closed on this one.
ReplyDeleteHi Anon, I did leave it closed for this recipe, because I used my 6qt crockpot and the batter was so thin. If you are using a smaller crock, or see that there is a bunch of condensation building on your lid, feel free to prop.

ReplyDeleteCannot wait to try this cornbread! I have made bread in my crockpot and had to preheat the base and crock for 1/2 hour first. Do I need to do the same or can I use a cold crock to cook the cornbread? Thanks and love not only your recipes but also your families comments!

I am so glad I found this site! Typical crock pot recipes tend to be casserole style and my family doens't like casseroles. Who would have thought you could bake in a crock pot. Anyway, I am inspired to try a family favorite we usually only have in winter becasue of the bake time. It is mexican cornbread. You mix up a batch of cronbread, only add a can of cream corn. Then you layer 1/2 the batter in the bottom of the pan. Then layer on cooked, seasoned ground beef. I usually season with onion and a little chili powder. If you want it spicier, you can add sliced jalepenos at this point. Then layer on a couple of cups of shredded cheese. Then top with remaining corn bread batter and bake. Since the cornbread turned out so well, I am inspired to try this version.

Ok, so I'm nearly a year late on this one, but I googled crock pot corn bread and this is one that came up. I noticed all the other recepies said to place it in a mold. I don't seem to have anything that will work so just pooring it in will do the trick? if you get this today (1-6-09) let me know. thanks.

You have inspired me! I don't have an oven right now, but I made cornbread using my regular recipe in the crockpot-and it was great! ReplyDeleteI'm sitting here with flour on my hands in the middle of making this recipe. I'm not using a GF mix, I'm using my Authentic Foods GF classic mix (which has no baking powder or xantham gum)
Any ideas on a xantham gum amount? I'm going to google around. I know I've found a website in the past that gives me a ratio, I'm just curious if I should treat the corn meal like flour, and call it 2 cups.
I'll let you know what I do and how it turns out!

ReplyDeleteI usually add 1 tsp each of xanthum gum and baking powder, although I don't have an actual reason for doing so---it just feels like the right amount.
if you find a more scientific explanation for the proper ratio, I'd love to know what it is!

I thought it was too chewy. I would probably reduce to 1/2t next time and evaluate. I'll post when I try it!
I am doing a month of crock pot cooking. Today I did a potato soup and have left overs so I wanted a cornbread recipe to do in the crockpot tomorrow to pair with the soup. Low and behold I found you and the recipe you used is my favorite recipe but tomorrow I will be trying it in the crockpot. I can't wait to see the difference and to see if the family still loves it!
ReplyDeleteI'm really glad you have this recipe blog, I never even thought of using the cornbread mixes from the store! So much easier. Here's a tip I use to follow years ago for crockpot breads: Use an empty coffee tin (greased) instead of directly putting the mix into the crockpot. Less clean-up.

Lol do you have it handy so you can clue me in on the amounts and I can alter with my Uk ingredients?

II tried a great variation on this. I put some chicken in and covered it with BBQ sauce at 8am. Cooked on high until 3pm, when I added the corn bread batter. It made great BBQ chicken & corn bread. Thanks for the idea!

I am making chili tonight and wanted to make my corn bread but wasn't sure how to cook it. Now I will try it in the crock pot, along with all the other quick breads I typically make around this time of year!
ReplyDeleteOK I have a simple 6 qt Crockpot, crockpot and have been using Pillsbury cake mixes and 2 Jiffy cornbread mixes. But one thing I have noticed is that the center of the item doesn't rise. Also it only takes an 1 1/2 hours to bake in which I have to turn the crock around for even baking. This unit is hotter on the back left side, then the front right side.

Is there a unit that heats under the crock as well as the sides?
Hmm. How old is your slow cooker? Mine do heat from the bottom and the sides -- I wonder if you've got a tiny short in yours, which is why it's heating unevenly?
