Margarita Chicken CrockPot Recipe
Day 111.
I read a lot of blogs. An awful lot.
One good thing about my job (other than reading a lot of blogs) is that I read food blogs and am inspired daily to try new recipes, and also to recreate them in my crockpot.
I love Alanna's Kitchen Parade blog. She also has a vegetable blog filled with creative and delicious-sounding ideas.
I got the idea for this chicken dish from her lime chicken recipe. We didn't happen to have any limes in the house, but we always have margarita mix.
The Ingredients.
- --4-5 frozen boneless skinless chicken thighs
- --1/4 cup dijon mustard
- --1/4 cup honey
- --1 T gluten free soy sauce
- --2 minced garlic cloves
- --3 T margarita mix
The Directions.
--mix your sauce ingredients in a mixing bowl--plop the frozen chicken in the bottom of your crockpot
--cover with the sauce
--cook on low for 7-9 hours or on high for 4-5. If your chicken is fresh, check it after 3 hours on high or 6 hours on low.
The Verdict.
This was delicious! The kids enjoyed it a lot, Adam and I each had seconds, and we didn't have any leftovers.We served the chicken with some rice pilaf from Trader Joe's.
I think what I liked the most about this dish is that I wouldn't have come up with this flavor combination on my own---but it so totally works and tastes amazing.

This sounds very yummy. I will have to find other uses for margarita mix before I buy a bottle for just one recipe. Any suggestions?

I'd probably stick with the lime juice the way Alanna originally posted.

ReplyDeleteJust discovered your blog. LOVE it. Being a thrifty girl, my first question is to ask you if you have noticed your electricity bill go up at all. I have always wandered if the crockpot uses too much energy but, of course, I love mine! The recipe sounds good. Gonna have to add that one in the menu rotation.

ReplyDeleteThanks, onecraftymama! I, honestly, have not gone through our pg&e bills to do a cost-comparison. Adam does the finances, and he hasn't complained or been happily suprised, which leads me to believe that they haven't changed much at all.
ReplyDeleteI found this article from Consumer Reports that says that the energy useage in a slow cooker beats simmering on a stovetop. Yet, this article says that slowcooking could actually consume more energy. The consumer reports article is repeated on HUD's website and on a few other energy conservation sites, so I'm more inclined to believe that source, but as always---gotta do your own research and come up with your own conclusions about what is best for your family.

This was a hit at our house too! both my 4 and 2 year old liked it as did DH and I! I didn't have margarita mix, but oddly enough I had some lime juice, so mine was more like Alanna, but it was great. Thanks!

ReplyDeleteThis is in my crock right now! I only had margarita mix with the tequila in it, and I thought I'd try it but I'm not good at experimenting!!! Hehehe :) Maybe next time when I will actually have time to make a Plan B. We did have lime juice though so I used that! I can't wait to try it!!

Tried this last night - another "thumbs up!" from everyone in the family, including our picky 5 year old son - he ate every last bite!
ReplyDeletePlus, this doesn't use THAT much margarita mix, so it's not like I sacrificed a margarita for it or anything..... :^)
What would you suggest I use as a substitute for the margarita mix? I don't keep that on hand.

ReplyDeleteOkay I have loved all your recipes so far, except for this one. I don't know if I screwed it up b/c I actually used limes(I didn't have any margarita mix) or if it just cooked too long, but it had this weird burnt sugar smell and it kinda tasted the same. I have done a marinade much like this before and grilled them so maybe I will stick to that. I do have to say that I have forwarded many of my friends your blog b/c I have been so impressed with the recipes. Especially the chicken salsa black bean soup! Yummy yummy!

ReplyDeleteI am in the process of making this and it seems like there is not enough sauce. It doesn't cover the chicken. Is it supposed to be enough to *cover* it completely? I poured it over the chicken but it's still just a thin layer at the bottom (so the chicken isn't really soaking in it). I thought I'd ask in case you got this soon and responded. I don't want to make a flop! Thanks!

ReplyDeleteThat's enough liquid. The chicken will produce a bunch of juice on it's own. If your slow cooker is huge, keep an eye on it, and if your chicken pieces are large, you can cut them up to allow more sauce to soak inside.

We had a halloween party and have left over margarita mix. Yep, I love margaritas but can only drink one, I'm such a lightweight LOL. I'm so excited to find this recipe. It's on my list to make this week.
ReplyDeleteOh and I read your post about a trio of dips for your own halloween party. I saw a trio of soups recently and yes the cords were incredibly short. They had a hard time keeping the trio plugged in. Also, how do you label 3 pots? They ended up putting signs in front of the 3 soups.

ReplyDeleteI'm moving in a couple of weeks and I'm trying to use up some odds-n-ends - I thought, hmm, Orange Chicken? So I threw chicken in a crockpot and added what was left in the jar of orange marmalade. Needed something more, so I threw in 1/4 bottle of Shiraz I've been meaning to drink up...then I added some tamari and some dijon honey mustard that needed to be used up...threw in some maple syrup (what the heck, the other flavors would probably drown it out anyway) and cut up a lime that was starting to shrivel up. Then I found a bottle of lime juice so I threw a little of that in, and added some dried red pepper flakes to give it some zing. It's been cooking for an hour and smells delish so I sat down to find your Apricot Chicken recipe again because the apricot jam is begging to be used before I move...and guess what I find? This recipe, almost like mine! I love your site. Love love love it! Thinking of adding a little garlic to mine now, like you did!

ReplyDeleteChristian, nope! all the same. Breasts might need to be cut a bit near cooking time and then flipped over a few times to let the juice soak in, though. they tend to be drier than thighs. enjoy!

ReplyDeleteFive and a half years later, this is still a crowd-pleaser. I bought the fancy Tres Agaves margarita mix to avoid the HFCS, quadrupled the chicken (two of the big tray packs) and doubled the sauce. Still good... just thought I'd add this note in case someone wants to make it for a crowd. I often find that quadrupling the meat means only doubling the sauce... if you kept all the proportions the same, you would end up with WAY too much sauce. Here's to a slow-cooked 2015!
