Maple Dijon Chicken CrockPot Recipe
Day 335.
I think anything with the word "dijon" in the title instantly sounds exquisite and marvelous---even though it's only a $2.99 condiment. Dijon is the show-off in the mustard family.
Carissa sent me this recipe on my birthday, and I printed it out right away. I was pleasantly surprised to have everything in the house already (well, minus the bay leaves).
The Ingredients.
--1 lb chicken pieces (I used frozen breast tenderloins)
--1 cup chicken broth
--2 sweet potatoes, peeled and chopped
--1 onion, chopped
--2 T dijon mustard
--3 T maple syrup
--3 cloves garlic, chopped
--2 bay leaves
--1 tsp thyme
The Directions.
I used a 4 quart crockpot---it was a good size. This fed the four of us with a tiny bit left for lunch the next day. If you have a large family or would like leftovers, double the quantity.
Put the chicken into the bottom of your crockpot and toss it with the thyme, maple syrup, and dijon mustard.
Peel and slice the sweet potato, and add to the pot. Add the onion and garlic. If you don't want your onion to have a crunch, put it at the bottom of the crockpot; otherwise on top of the chicken is fine.
Pour in the chicken broth. Add the bay leaves.
Cover and cook on low for 6-8 hours, or on high for 4-5. This is done when the chicken is cooked through and the vegetables reach desired tenderness.
The Verdict.
Very good, and quite moist. The picture up above is a bit misleading----I had enough juice in the pot to ladle over the vegetables and some leftover white rice. The sweet potato fell apart a bit, so some were more mashed than chunky. The kids each ate 2 of the breast tenderloins, and a bit of sweet potato.

ReplyDeleteThese last two recipes sound just yummy! Stephanie, I just have to tell you how our Thanksgiving went, thanks to the Crockpot recipes you shared. My husband and I got out of Dodge in our motorhome, telling our kids if they felt like abandoned orphans they could always drive up just for the day (we were three hours away) over the holiday weekend. The RV park where we stayed was having a Thanksgiving potluck feast, so our Thursday was taken care of. Our kids decided to drive up on Friday, this would allow them to go to the inlaws for Thanksgiving day and come to have Thanksgiving the next day with us. Cool, huh?
ReplyDeleteBefore we left, we smoked a large pork loin and I baked sourdough bread and cornbread and toasted the breads. I also made two batches of Crockpot broth from bones I had been saving in the freezer for that.
Thursday night, after I was stuffed with turkey, I made the Crockpot cheesecake and put it in the frig to chill overnight. I used Splenda instead of sugar and it was yummy. We served it with canned sugar-free cherry pie filling over the top.
On Friday, when our kids came up to the motorhome, I made the Crock pot stuffing recipes (I combined the cornbread and bread stuffing recipes you shared since I like the combination of the two breads, using the Crockpot broth made earlier, in one Crockpot and in another Crockpot I put in the sliced pork loin with just a bit of reserved broth.
To make a long story short, this was a wonderful meal, all homemade, but made much easier and yummier with the Crockpot recipes you shared. You are the best!

ReplyDeleteI hopped on here looking for a chicken recipie and realized I had most all of the ingredients for this one (normally I don't have sweet potatoes lying around).
ReplyDeleteI made a double batch using frozen chicken breasts and had to omit the bay leaves because I didn't know I was out. I chopped the onions finely to add to the sauce instead of eating on their own.
It came out pretty well. I thought too much liquid had come off of the chicken, but the sweet potatoes that were completely submerged were better than the ones with slightly dry parts.
My wife thinks there is a slightly "off" flavor, but I'll have to attribute that to using sugar-free syrup instead of regular maple syrup.
All-in-all a good recipie, especially served with rice.

ReplyDeleteWe had this tonight, and the hubby and I *loved* it. :) I doubled the sauce, but wished I'd tripled it. I always have to leave things in the crock on low at least 8 hours, so my things have to have a lot of liquid. It was enough with double, but I wished I'd tripled it so I'd have had enough to go over rice. Great flavor, and the hubby loved the texture of the sweet potatoes. Thanks for the recipe!

ReplyDeleteI had to use Yam's instead of Sweet Potatoes and it was very tasty. I hope to try it w/ the Sweet Potatoes (my store was out of stock!) I would add more chicken next time or use breasts, the package of tenders I purchased was not enough meat.

I tried this the other night and we did not like it. I used fresh thyme, but otherwise I followed the recipe. It really seemed to be missing something.
ReplyDeleteJust tried this over the weekend and we really enjoyed it... I think its a good one to add to the rotation. I doubled the recipe and used a bigger crockpot, doing low for 8 hours. Probably could've stopped at 7 hours but we were out & about.

ReplyDeleteI did modify based on what I had on hand:
Instead of bay leaves/thyme I used 1/2T of Mrs. Dash Caribbean Citrus and 1/2T fresh grated ginger.
Instead of chicken I used pork.
I doubled the amount of broth/dijon mustard liquid base....mostly because my two sweet potatoes happened to be huge lol. Doubling it more then covered everything well.
Overall, it was my first time with sweet potatoes in something other then a sweet potato casserole....and I loved it...very delicious.
Made this yesterday and followed the directions completely - very good. My boyfriend wants me to put it into the rotation - although next time, I think I'll make it a little less sweet.
ReplyDeleteMade this the other day because I actually had all of the ingredients lying around. I love the flavor combo of dijon and maple! However I'm wondering if someone could clarify something for me. Several crockpot recipes I've tried (this one included) seem to start off with a bold flavor (hello dijon!) but by the time they are done cooking the flavor is pleasant but very mild. Are there some ingredients/spices that should be left out until the last hour or so? I had this problem last week with some chicken I cooked in a cilantro/lime salsa. Thanks!
ReplyDeleteMade this yesterday, Steph, because I needed to use some bone-in chicken breasts. I just took a taste, but it was wonderful. Will have it for dinner tonight. I was afraid the thyme would be too strong frome the smell, but the flavors blended beautifully. I may actually take the sweet potatoes and broth combination (at least in part) to turn into some soup for me as hubby is not a sweet potato fan.

I made it with carrots and reduced the maple syrup by 1 T since my husband doesn't like "sweet" dinners or sweet potatoes. It turned out great and he raved abou it! Thanks for the yummy recipes!

perhaps a silly question but did your thaw your frozen chicken breasts prior to putting them in the crockpot?
ReplyDeleteIf nothing else, this dish reaffirmed for me that i do not like sweet potatoes. Even with marshmallows on top. My husband hates them, so i also included some giant carrots i found at our local farmer's market, and they turned out very well. The chicken itself was ok. Not phenomenal. I made the sauce the night before so i could throw it all together on my lunch break. When i asked my husband to smell it, he kind of reeled back and said ''what is it?'. Not typical for most guys (who will smell anything if you make it a challenge). I doubled the syrup cuz i just couldn't discern it over the thyme and dijon. Still couldn't really taste it in the final product. My 3yr old threw a tantrum at the table and went to bed sans dinner. My husband's final verdict was 'you've made better'. Bummer.

Made this tonight for dinner. I doubled the sauce ingredients, except for the broth and garlic, and increased the chicken by a pound. There was plenty of juice, and I thickened that up with corn starch. I also substituted acorn squash for the sweet potatoes. It was good, but, there was something a little off in the taste. Not sure if it was the bay leaves or the amount of thyme. Everyone ate it, but I don't think I'd make it again. The dijon and maple were lost in the "off" taste.
